Sarah's recipe


Here is another easy-to-be-made and no-fire-involved recipe. Great to be done in hot summer days when heat cooking is torture..

What is needed:


You dice tofu and tomatoes; add sliced olives, olive oil and condiment. Mix well and serve with fresh bread.

P.S.: the recipe's name comes from a beautiful lady who inspires me daily. Her blog can be read here. And my recipe is an adaptation of one of her tasty recipes, which can be found here. I replaced feta with tofu and onion with olives so I've obtained a nice fasting recipe which can be served whenever and wherever.

Tzatziki or Tzadziki or Tsatsiki


Here is an easy, Greek specific recipe which worth it to be made for the hot summer days. And thanks God it requires no fire!

What is needed:


Scrape the cucumbers (add-on: in order to avoid excessive water, salt the cucumbers and squeeze them. Thanks, Raluca B.!), smash the garlic and chop the dill:

Add yoghurt, salt and olive oil. Mix well.
To be served cold.

Fish paste / Pasta de peste


What it's needed for this simple, cheap and tasteful recipe:
120gr fish meat (I use tuna can), 100gr. butter, 1 onion, juice from 1/2 lemon, salt, pepper 

You start mixing the ingredients. Begin with fish and butter:

After you obtain an homogeneous paste, add all the other ingredients (lemon juice, salt, pepper, chopped onion):

Beetroot salad




What you need:

For a 4 person salad you need 4-5 medium beetroot. You bake them into the oven. (Mine were already baked when I took the above picture.)


Peel and cut the beetroot in cubes:
 


Scrape the horseradish:
 


Add salt, olive oil, vinegar and water. Be generous with salt and vinegar. And with water; you will be surprised how thirsty beetroot can be, because it is dehydrated after it was baked. So, in order to have a juicy salad let it stay for few hours before consuming it. Most probably some more water will be needed to be added.
 


Usually in our house this salad is served with chicken schnitzel.

Spawn salad

This recipe was the hit of our New Year's Eve menu. I added spawn salad to my recipes list just recently, inspired by my mother in law. 
It's a cheap (as long as you use cheap spawn) and easy-to-be-done recipe.
And the result in delicious:  

Ingredients:

You prepare the semolina (boil semolina + water for about 15 minutes, until you obtain a paste with the consistence of cream.)

Cool down the boiled semolina (it's consistence will become harder when cold).
Add spawn and mix:

Add in few steps the oil, while mixing.
Then add vinegar.
Mix again.

Add chopped onion and mix one more time:
(Add some salt only if needed. Take care about salt - spawn comes already salted!)

The salad is good served with olives.

Don't cry for an onion!

In case you are interested in a solution for the tears while cutting onions, next time when you have to cut one, remember and try this: keeping your mouth full of water while cutting onions, turns the process into a tears-free one.
"Ha ha ha ha! It's magic!" ;-)

Apple / Pumpkin pie


This recipe was originally with apples, but this fall I adapted it with pumpkin instead of apples and it proved to be delicious too.

What you need:

You start dough's preparation in 2 different bowls (in 1st - intermediary dough and in 2nd - the paste):

Mix the ingredients. The intermediary dough should be not-sticking (maybe some extra flour is needed)

Lay flat the intermediate dough and then on the top of it, on all it's surface, lay flat the paste:

Roll the resulted final dough:

Cut it in 2 pieces of the same size. Prepare them (lay flat).

Prepare the pumpkin (scrape the pumpkin and mix it with the ingredients listed below):

Put the 1st layer of final dough in the tray and add on top of it the pumpkin. Here you have to be fast, because once you've mixed the pumpkin with sugar, the pumpkin become juicy.

Finish by putting on top the 2nd layer of final dough, build the margins and prick the dough with a fork.

Cook it until it become golden:

P.S.: I never imagined that posting about cooking is the hardest for me.. I don't know the English words related to cooking. But I know how excited you are to become one day a cooker as good as I am :-)), so that's why I'm doing my best to improve my English vocabulary with new cooking words.

Fast and yummy pizza

This is the fastest pizza I know. It is fast because of its dough, made with backing powder instead of yeast.

What you need for dough:


On top of it you can put whatever you want / have / like.
This time I've used:

You butter the tray:

Mix all dough's ingredients until you obtain a not-sticking dough (maybe some extra flour is needed):

Stretch dough on all tray surface, creating an arisen margin

Then you start to put on top the other ingredients you have, starting with the sauce (in my case very simple - chopped tomatoes) and finishing with cheese

Then you cook it until the dough's margin and the cheese become golden.
Buon appetito!

This is a 4-5 persons pizza and it's delicious when it's warm. So when your family has not enough members for eating it at once, you invite some good friends which you know that usually have a lot of goodwill in helping you eating it.
